Hi Guys! I hope you are all having a lovely day. Today I decided to make some chocolate muffins and wanted to share them with you. They are vegan and all of my recipes will be as I am vegan and obviously want to be able to eat my own creations!! So if you want to make them, this is how…
You will need:
A hand held mixer
A 12 hole muffin tin lined with paper cases
A mug of water
100g dairy free spread
85g caster sugar
1tsp vanilla extract
150g plain flour
1/2 tsp bicarbonate of soda
3/4 tsp baking powder
25g dairy free cocoa powder
130ml dairy free milk
Start by pre-heating the oven to 170 C.
Grab your 1st bowl and pop in the spread, sugar and vanilla extract. Then mix them all together until smooth.
Leave that to side and then grab the 2nd bowl and sift the flour, bicarbonate of soda, baking powder and cocoa powder into it and combine the ingredients. Then place those ingredients into the 1st bowl and start mixing them together.
Whilst mixing, slowly pour in the milk. When the mixture is smooth, it’s ready but don’t over work the mixture.
You are now ready to put the mix into the muffin cases. Get your mug of water and dip the table spoon in then equally divide the mixture between the cases and you can ever so often dip the spoon into the water again so that the mixture comes off easier.
After that, pop the tray into the oven and bake them for about 20 mins until a skewer inserted in the centre comes out clean. After that, take them out of the oven and leave them to cool.
Finally, if you want to you can decorate your muffins but it is your choice of how you would like to do it. I chose to cover them with chocolate icing and sprinkles (because you can never bake without using sprinkles) but you can do it however you want. Your muffins are now ready to eat!
